Winemaker's Tasting Notes
Ripe fruit was hand harvested, gently crushed and pressed. Fermentation was carried out in stainless steel tanks with a small portion being transferred to French oak barrels for completion of fermentation and ageing on yeast lees. This wine shows aromas of stone fruits and honey. Ripe flavours of pear and nectarine are underpinned by subtle nutty vanilla characters which develop into a rich lingering finish. This year with the aim of maintaining the balance of the finished wine, we have chosen to stop the fermentation a little earlier to retain a slightly higher residual sugar.
