Ripe fruit was hand harvested, gently crushed and pressed. Cool fermentation was carried out in stainless steel tanks, prior to a period of ageing on yeast lees to add mouthfeel. European in style, complex and dry with lively mineral acidity. Perfect with a platter of your favourite antipasto.
